Having Trouble Grilling Something Easy and Yummy? Try This!
Grilling for family and friends is a fun pastime for me. Among many things I love to do ribs, as you can see above. But they are time consuming, seven plus hours. They're good eating for sure, but how about something a bit quicker?
So, here is an easier dinner to grill that doesn't take as much time but is so yummy. Yes, I used my Traeger smoker and cooked a boneless turkey breast.
You're saying so? Easy peasy! Yes and no. I've smoked a Turkey Breast before, on my Traeger Grill, and it was okay but I knew I could do better. So I made a few changes.
First of all I took the time to brine the breast because it will be much more juicy after cooking. I make my brine very simply with a combination of kosher salt, brown sugar, pepper corns and some herbs. Stick it in the fridge for between 12 to 24 hours, I let mine brine overnight.
The next day, after a gentle rinse, I rubbed a very light coating of Mayonnaise all over to act as a binder for the rub. Then, I lightly coated the breast with my rub/seasoning of choice, tying it up just a bit to hold it together.
Next, I wrapped it in bacon! Oh, yeah! There is nothing that bacon won't make better!
Criss-crossing the bacon is best!
I placed on a little rack with pan to catch drippings and placed in on the grill. It's indirect heat, with smoke, yum, so no problem. I had pre-heated the grill to 250 degrees. Of course I inserted my wireless Meater meat thermometer in the breast and connected it to the app on my phone. Close the lid and let it cook.
I let it get to about 160 degrees. This was a small one so it only took about 2-hours or so. Remove it from the grill, put foil over it to rest for about 15-minutes, and yuuuuumm!
This was absolutely the best smoked turkey breast I have every had.
