Specialty Coffee Shop Serving Avocado Toast Coming to Downtown Market

A new option for coffee and a quick bite is coming to Grand Rapids' Downtown Market this summer.

Squibb, which currently has shops on Wealthy and Fulton, will open its third location in early June. Owners say the menu will be unique at the Downtown Market location, with a continued focus on offering a traditional yet approachable café experience.

Owner Mallory Squibb said in a release,

“It’s important to me that Squibb is a place where people come to share a great cup of coffee with a friend, and our concept for this downtown location is designed with that in mind. I’ve always loved the Downtown Market because of the sense of community and collaboration it inspires. We’re excited to contribute to the communal energy of the Market Hall and engage with those who haven’t yet experienced Squibb.”

In addition to serving specialty, signature, and made-to-order espresso, coffee and tea drinks, the new Squibb location will also feature a light menu of toasts. Options will include avocado toast, vegan toast made with tahini and gigande beans, and a toast topped with Bellwether ricotta, strawberry hibiscus jam and pistachios -- YUM! It looks like Squibb's other locations serve pastries too, AND the Wealthy location is also a wine bar! I don't know if the new location will serve wine, but that would be awesome! I do know you'll be able to buy whole bean coffee at the new new shop.

With indoor an outdoor seating, Squibb at the Downtown Market will be located next to Pho616 and Slows Bar-B-Q.
