There's a new option for gluten-free fast food coming to Grand Rapids!

Wood TV 8 reports that owner Aaron Muller plans to open the drive-thru restaurant, Papa Chops Eatery, on 28th Street near Breton Road.

Muller previously owned and operated Rose Engraving at the site.

A diagnosis of celiac disease within the past few years inspired Muller to change to a new business path and enroll in culinary school at Grand Rapids Community College’s Secchia Institute. Celiac disease, which is estimated to affect 1 out of 100 people worldwide, is an autoimmune disease in which the ingestion of gluten leads to damage in the small intestine.

Muller tells Wood TV 8 about his new restaurant,

I wanted to create a place that people can come to, that they don’t have to worry. They don’t have to get a manager and talk about their condition or allergy. They can just simply come in and it’s already taken care of.

He and Chef Thaddeus Whorley have been working to develop Papa Chop's menu, which will include pizzas, hamburgers, salads, subs, soups, wraps, onion rings, mozzarella sticks, French fries, desserts, and more - all gluten-free. They plan to offer allergy friendly options as well. You can see a preview of the menu here.

According to Wood TV 8, Muller had planned to open the new restaurant in April, but has faced construction delays due to the COVID-19 pandemic. When open, Papa Chop's will operate from 10:30 a.m. to 9 p.m. six days a week. To start, the restaurant will be takeout only, but Muller hopes to expand next door to create a dining area. He also aims to offer take and bake meals.
