It's been 20 years since this once popular restaurant closed it's doors, but it looks as if it will be "rising from the ashes," so to speak.

Return with me to yesteryear, okay, the 80s, 90s and 2000s, when we all enjoyed the fun Mexican restaurant, Chi Chi's!

Chi Chi's was a great, fun and delicious place to go. CNN said Chi-Chi’s was known for its eclectic interior as well as an expansive Tex-Mex menu that served everything from fajitas to fried ice cream. What's not to like?

Chi Chi's started in 1975, CNN.com wrote, and was very successful until 2004. They were hit hard by a hepatitis A outbreak in Pittsburgh. It was traced to green onions in their salsa. 650 people got sick and four died. There were hundreds of lawsuits.

So, they sold to Outback Steakhouse and Outback closed the remaining stores and opened Outback's, Bonefish Grill's and others.

CNN reports Hormel Foods, who owns the trademark, has given permission to Michael McDermott, the son of Chi Chi's founder,  Marno McDermott, to use the name on new restaurants he wants to open.

McDermott said:

“We have seen the impact our restaurant has had on individuals and families across the country and believe there is a strong opportunity to bring the brand back in a way that resonates with today’s consumer — an updated dining experience with the same great taste and Mexican flavor.”

Chi Chi's products have never gone away. You can still by their salsa's, chips and margarita's because they are all made by Hormel.

WILL GRAND RAPIDS GET A NEW CHI CHI'S?

No one is saying where the new locations will be but with a target date of sometime in 2025, we should be hearing soon.
