My wife is a great cook. She's had lots of practice over the years. I, on the other hand, am good a just a few dishes. The easier, the better! One of my favorite things to make is something called Gene's Best Burritos. I have messed with this recipe many times. It's best when done simply.Gene's Best Burritos

1 1/2 pound ground beef

1 can of refried beans

pinch of salt & pepper

1 package of 10 Burrito tortillas

2 cups of shredded cheese


Sauce

I jar of your favorite salsa

I small can of tomato sauce

I envelope of burrito mix

I cup of water

1 beef bullion cube

brown ground beef; then drain excess grease

mix with can of refried beans

cook on low for about 5 minutes

blend salsa, tomato sauce, envelope of burrito mix until well blended.

put one cup of water and beef bullion cube in microwave for 1 minute.  Add to blender mix and blend for 30 seconds

pre-heat oven to 350

wrap meat mixture in tortilla shells and put in pan.

cover with sauce

cover with 2 cups of cheese

(I like the Kraft Mexican blend, but cheddar or just about anything will do)

cook at 350 for about 30 minutes until cheese is melted.

Serve with more salsa and chips and enjoy!
