Last month, during another cold West Michigan winter day, Grand Valley State University Geology students, faculty, and alumni kept warm at the 11th annual GVSU Geology Chili Cook-Off.

Peter Riemersma Associate Professor of Geology at GVSU started the competition after having participated in one at University of Wisconsin-Madison. The GVSU chili cook-off has grown over the years.

This year's competition included 15 chilis, plus desserts and side dishes. There were about 70 participants overall and multiple categories in the competition.

Chef Joe Torres of GVSU's Campus Dining was among the judges. He explained that a good chili uses a lot of ingredients and flavors, so a balance is important, but ultimately what makes a chili good comes down to personal choice.

I also had the pleasure of being a judge at the event, so I had a pretty amazing lunch last month. Thanks to GVSU Geology for having me out.
